Oats and Sattu Pancakes

Ingredients

  • 3-4 Tablespoons Oats ( grinded into a powder)
  • 3-4 Tablespoons Sattu powder
  • 2 Tablespoons Yogurt
  • One medium spring onion and green (chopped finely)
  • One sprig of mint (chopped finely)
  • One teaspoon red chilli powder
  • Half a teaspoon Turmeric 
  • One teaspoon lemon juice
  • Water to adjust the consistency
  • Oil for shallow frying

Preparation

  1. Mix the oats powder, sattu, yogurt in a bowl until a batter consistency is achieved without any lumps. 
  2. Add in the chopped spring onion and mint. Mix well. 
  3. Season with the remaining spice and salt.
  4. Adjust the batter consistency with water till it can be spread easily on a pan.
  5. Add the lemon juice and give it a last mix.
  6. Fry in small batches for two minutes on each side, on a medium flame.

Tips

  1. Try to use a non stick pan for the minimal use of oil and ease in turning the pancakes.
  2. Serve hot with a mint chutney or a dip of choice.
